Having trouble with my banana cake

for some reason my last couple of attempts have been lovely fresh from the oven but have quickly become almost slimy and soggy... I am assuming the bananas are reabsorbing moisure any ideas as it is a great way of using up the ones that are over ripe...

At one time, the supermarkets sold them cheap when they had achieved spottiness, but not any more. Where are all the spotty bananas going to?
