I need to use up.....

Half a punnet of ripe apricots, half a cucumber, half punnet baby plum tomatoes, half tub Boursin,some cabbage, cooking apple and 2 rashers of bacon!

cook the tomatoes and pass through a sieve, stir in the boursin to make a cheese and tomato sauce,
shred the cabbage and chop the apple steam until just tender and put in oven dish with a little oil and the crispy bacon bits (plus or minus onion) pour over the sauce and bake for about 25 mins approx 180 degrees
slice the cucumber to serve with it and eat the apricots while you are cooking

Make a boursin slaw salad with a crispy grilled bacon .
mix shredded raw cabbage grated onion mix in boursin with about a teaspoon of lemon juice or vinegar.Serve with your toms & cucumber
You could add some home made croutons to bulk it out .
Cook your apple & apricots with a wee drop sugar & freeze for a crumble later on .
