Just put my two sponge cakes in the oven to bake for a charity bake thing at work tomorrow. Not baked anything for years (used to do loads) and a bit out of practice...errr my flour I found in the cupboard expired in 2008!

Praying it turns out ok, at least edible and worthy of buying for charity (not expected to be in the prize winning haha!).

Went for simple and thanks to everyone who helped on my earlier thread - hoping I'll get the baking bug back to make more stuff.

Am leaving the buttercream making until I see how the sponges turn out!

Gateful to anyone who can keep their fingers crossed for me :)

If all else fails, scoffing the left over cake mix was worth it, oooh I've missed that!

1. Announce to AB you are cooking Victoria Sponge Cake
2. Get the recipe or ask ABers (allow 20 mins for Vodka and Eccles to respond)
3. Prepare the following ingredients:

200g caster sugar
200g softened butter
4 eggs , beaten
200g self-raising flour
1 tsp baking powder
2 tbsp milk


100g butter , softened
140g icing sugar ,...

Use the butter cream to stick it back together, Jenna.
sounds as if it is a little soft......have another go, but use some newer flour. Don't be beaten....by the way, the eggs, add very, very slowly and slower again...that will make it much more moist - and if you have access to ducks eggs, they are brilliant for making the sponge richer.
Leave them to cool in the tins, then hold a wire rack against the tin and flip it over.

Ahhh good plan Vodka, thank you :) Don't worry DT, I bought new flour haha, I'm not that stingy :)

I don't have enough eggs for another one - or marg for that matter, going to have to try and rescue what I have. One looks more salvageable!

Maybe if I just cut loads round I can pretend it's a trendy cupcake haha!

They are very moist inside but were dry on the outside and browning a little so didn't want them to burn. Hmmm....
Ok I have just seen your piccie. Those paper thingys are no good. You just need discs for the base of the tin and slightly butter the sides of the tin.....for the next time! xxx

Ah, yes, I think that is a plan :) Serves me right for being a cheapo and scouring the pound shop! Well, it should have novelty value at least! So much for thinking it may be a way of getting nice guy I've spotted to notice me...I am thinking this may backfire (see recent "traditional" CB post)...waaaaaah!

I so used to be able to bake! Stupid arthritis wrists, should have bought a mixer thing.
So long as it tastes good don't worry! The sponge itself looks lovely so I'm sure it will be fine. xx
