I saw a program on this a while back, don't know if it was the same prison but the inmates where taught by professionals how to run a restaurant, there were chefs, maitre d's etc, it was dry though If I remember correctly, so no wine waiter. Any inmate lucky enough to get a job in the restaurant had to be on their best behaviour, there was zero tolerance. Good idea all round, they came out skilled and learnt about commitment and responsibility, they should maybe try it with more professions, if prisoners are released and can find work quickly then recidivism might reduce.

Too often people sit in their ivory towers passing judgement on others. Some people are/were born with not much hope. This scheme could give them the skills and experience to be a fine, upstanding, tax paying, citizen.
