Cut a big wedge out of the pumpkin, scoop out the seeds and peel it. Chop the flesh into chunks - about 5 large pieces per person. Peel and quarter one red onion (if serving 2). Wrap the 5 chunks of pumpkin, half an onion a drizzle of oil with some mixed herbs in a parcel of silver foil.
Roast for about half an hour and serve as a side dish to a roast dinner. Its delicious.
