Bonesless leg of pork.

I have a 6kg boneless leg of pork. I will cut it into portions but beside roasting what else is it suitable for?
Can I dice it myself and use it to make a stroganoff or something similar?

Leg is one of the Prime cuts of Pork so suitable for most dishes -i would tend not to do pulled pork as it contains less fat than shoulder and could turn a little dry. Some ideas - kebabs - stir fry - goulash -escalopes -casserole with cider, onions and apples finished with some creme fraiche added at end with fresh chopped thyme

You could make a pork and cider casserole, with onions and apples. Delia has quite good recipe.
Pulled pork, slow cooked and then shredded, there are loads of different recipes; spicy mexican Carnitas is great for enchilladas, or you can make a tamer version.
Madhur Jaffrey's vindaloo is amazing and really flavoursome, you can moderate the heat by adjusting how many chillies you add.

Try a Chinese style marinade, it's lovely with pork or chicken. I can't give quantities because I'm a sort of "just-chuck-it-in-and-see-what-happens" type of cook, but my marinade usually contains a mix of crushed garlic, grated ginger, soy sauce, lemon juice, five spice powder, honey, sunflower oil, and. bit of finely chopped chilli. Mix it all together and put in either a plastic bag or a plastic dish with a lid on. Add the sliced pork and mix thoroughly till everything's coated. Leave for as long as possible before cooking. Delicious.
