Does anyone know the requirements in law if I act as a middleman taking orders for venison and Game killed lawfully and purchased direct from the producer (deer farmer/gamekeeper)?

I read acts of parliament as a past time on the bog
and so obviously i goggled the Game Act 1831

up it comes
but also a good wiki article Game Act 1831 -
and THAT says that the game licence ended in 2007
but it was still needed for certain birds - woodsnipe

The acts seems to be money making for the govt - the acts are 1831 and 1860 and not health and safety
so I wd ring your local council and comply with what they say and of course get it in writing.
