I love it. I'm lucky enough to have a friend who lives in Scotland, near a delish butcher who makes it to his own secret recipe - and I get a huge amount every Xmas for much cheaper than we pay in the supermarkets in NE England. I chop it & freeze it batches. I do the usual with it i.e. serve it with clapshot/roll into balls, breadcrumb it with whiskey sauce/stuff chicken breasts with it... does anyone else have any other recipe ideas for it?

Yes can make into puff pastry pies. I myself prefer to make them with shortcrust pastry.......... lovely.
Meg: its a coastal version of a thin asparagus: http://www.bbc.co.uk/food/samphire
And it's bloody salty.
>>>What is Samphire? Never heard of it
I can only assume that you don't live in a coastal county!

>>>I wondered what it would taste like in a pie or as a replacement to mince in a mince-ish dish
Add some fresh-ground black pepper, top it with some cheesey mash and stick it in the oven for an interesting variation on cottage pie.

I've also come across haggis (in a London pub) served in a red wine sauce. It was nice but I'd still prefer good ol' neeps and tatties!

What`s the recipe for `Balmoral Chicken`? Sounds good.
