Preparing A Phesant

A friend of mine is tonight, bringing me a phesant, that was shot on Saturday. How long can i keep it before i have to pluck and gut it?

You can do it straight away and then even pop it into the freezer if you don't need it straight away. Pheasants don't really need to be kept like other game.

You need to do it as soon as possible, bacteria will grow quite quickly. Pluck it, gut it, pop it in the freezer if necessary, but it will taste better and gamier if you eat it fresh.

You can freeze it as it is, feathers and all or just pluck and gut it and then freeze it.

Wrap tightly in tinfoil then throw in the bin!

Watch out for the 'shot' when plucking it and even more when eating it.

I think all Game is best fresh, looses a bit on cooking. Game also makes excellent curries as its flavour comes through the spices.

Thanks for the answers Guys, appricate that. - might have to freeze it whole as suggested, can't see me getting round to plucking it until Thursday. Should be intresting never done it before. - in fact never eaten phesant before. - looking forward to it.
