How do I check how much ink I have left in my cartridges please?

Without knowing the make and model of your printer, most come with a utility that will estimate ink levels.

FILE>PRINT>PREFERENCES>INK LEVELS

If you have an HP Printer then the following may help you.
As I refill my cartridges, I always weigh them when new so that I can judge the ink content before they run out, as the ink indicator on the printer doesn't work once you start refilling cartridges.

Cartridge HP300 Black. Wt. new = 28gms Ink =4cc or 4 gms
Cartridge HP300 colour. Wt. new = 34gms Ink =4cc or 4 gms
NOTE, The above cartridges were supplied with the printer and assumed to be only half full as believed by most people.

Cartridge HP300XL Black.
Wt, new = 39gms approx. Ink content = 12cc or gms
Cartridge HP300XL Colour.
Wt, new = 46gms approx. Ink content = 3.5cc or gms per colour

Ink refilling cost for the last two years after buying the HP300XL
cartridges = £5.00.
