I remember watching a TV prog not so long ago about these - I think it was Jamie Oliver's mate, Jimmy - anyway he went to a processing plant for them on the Brittany coast and he established that they were one of the few processed foods that have good ingredients!
Its the enzyme they use in the binding agent of the (crap) scraps.... transglutaminase. It can be used as a vehicle to carrying flavouring agents and it's that which nails you "aficionados"
buying ones clearly labelled "made in brittany" with a week shelf life may be advisable then
Jogger I can so identify with your remarks. I bought some earlier this evening before I joined this thread. I kind of knew all this already but still Would sooner munch on these than for example crisps.
