You should leave it an hour and preferably two, otherwise any vigorous exercise could make you feel quite unwell, and even cause vomiting. Also, it will make your exercise process feel quite uncomfortable doing activity on a full stomach.. A banana eaten on the way to the gym from work is a good food to eat to keep the worst of your hunger pangs away.
I realise this won't fit it with your Mum's cooking schedule and she probably won't want to still be doing "Dinner Lady" duty around 8 p.m. when you return, so it looks as if you may have to start preparing your own , unless you're particularly nice to her ! The other alternative is to check whether you can have an early morning gym session before going to work.
