Recipe wanted for fishcakes. I would like to use cod, salmon and prawns. I would also like some lemongrass flavouring but I'm not sure how to add this??

Any tips would be appreciated

Wow, cheers for that Barney.

I might modify the recipe slight to include some potato as those that fishcakes can be a little dense.
use sweet potato.

I don`t have a recipe because I tend to make things up but I would use a portion of smoked fish (smoked haddock or mackeral fillet) in with the other fish as fishcakes can be a bit bland.
potato, poached fish, half an egg, mustard, finely chopped onion, seasoning and breadcrumbs, mix well and add more breadcrumbs if mix is too sloppy. Leave mixture in fridge for a couple of hours or overnight, shape and fry in olive oil over medium heat until cooked through. A can of tuna can also be used instead of fresh fish. Beautiful.
Fish? Cakes? No, no, no. Fish OR cakes, not fish cakes!
Seriously, I feel fish cakes lose out, they taste not of fish but of blandness, and personally I wouldn't waste good fish.
Up here in Lancs .we take two thin slices of potato with mashed pilchards between ;dip it in batter and deep fry.The local chip shop uses flaked cod instead of pilchards.
Debone Fish. Marinate fish with calamansi and a sprinkle of iodized salt. Saute fish with garlic and onion. Add potato cut in small cubes. Season with Knorr meaty seasoning, ground pepper. Wait until the potato is tender. Set aside. Prepare egg-flour mixture. Mix with sauteed fish. Form a flat circle on a banana leaves then fry.
