That's just a selection, and most of the above artists have loads of great acoustic songs. Plus, there's obviously the likes of Cat Stevens, Bob Dylan, Neil Young.

one that gets me everytime is twilight by elliot smith listen to it, then really listen to the lyrics and then see what happened to him making that album it makes a grown up like me well up every time!
