A bed of rocket,finely chopped baby plum tomatoes and grilled peppers,sliced salami and mortadella or parma ham,olives and olive oil.
Bed of rocket and baby spinach leaves,baby plum tomatoes,cold left over salmon or shredded chicken,chunks of avocado,homemade mayo.
Any left over meat with baby leaves and mayo.
Mixed leaves, chargilled courgette slices, chargrilled asparagus, architoke hearts, palm hearts, roasted pepper slices, avodado, those little peppers stuffed with feta that you get in oil, olives, pine nuts. Not all at the same time, obviously.
As a child I loathed radishes but now I adore them. Can't imagine a salad without them.
Incidentally, in Ancient Greece, radishes served a different purpose. The traditional punishment for adultery was to stick a radish up the offender's backside. I bet that brought tears to the eyes.
Sliced up baby gem lettuce, large handful of rocket, thickly sliced cucumber, chopped celery, sliced red and yellow peppers, a good handful of red and green grapes halved, whole cherry tomatoes, all tossed together. With a bowl of seeds and croutons, and various dressings for everyone to add their own.
A favourite is: Cous cous flavoured with tomatoes, garlic, herbs & stock with baby leaves, avocado, tomato's, chopped fresh beetroot and shredded smoked salmon.
For a simple tri colour side salad swap your lettuce, cue and toms for
watercress, grated carrot and radishes or
rocket, sliced beetroot and shredded yellow pepper or
gem lettuce, chopped celery and shredded red onion or
spinach leaves, sliced avocado and cherry tomatoes
