Flour and water I think

I demand an apology

They are not made of anything. Strips of foil or greaseproof paper are put over the buns in the cross shape before they go in the oven.

As the buns cook they brown, except for the covered cross.
If that's true Ethel, why does the white bit rise further than the rest of the bun?

Whatever you want really, this one is sugar butter and flour.

In my recipe, they are cut in with a knife...

It must be regional variations that account for the different ways of putting the cross on.
I've always made it by making a stiff paste from flour and water, and then using a piping bag to mark the crosses on the top.
i went to cookery school in london and we made them from sugar, butter and flour
