I've just made a big pan full of the above. I used about 6lbs of courgettes, 4 onions, some chicken stock & a jar of Pataks mild curry paste. I cooked it all up & blitzed it with a stick blender.
Surprisingly, it tastes excellent.
Last year was the year of the pumpkin on my allotment..I had loads. I did a similar recipe, but I swapped the curry paste for cumin, coriander & chilli.
I'd never tasted pumpkin until just a few years ago. I was very pleasantly surprised and made a whole load of soup with it all. It was gorgeous. Wish I had an allotment. I have a garden, but living in a town centre, it gets full of cat Krap and fox doo-doo. Oh joy...
Courgettes, onions and loads of fresh basil and a bit of fresh mint - delicious. No need for stock cubes of any sort and definitely not curry paste - let the veg speak for themselves.
