I have no food allergies - can eat anything - and do. I do have some sympathy for people with real allergies having worked with a colleague who carried an epi-pen at all times in case there was nuts in any foods. He would go into a coma and we all knew exactly what to do. Fads are something totally different.
my friend is gluten intolerant and this is a lady who truly never ever complains. She just cooks stuff without the gluten - maybe a big pot of soup to do her for a cuppla days. If she were to take gluten by mistake - her face swells up so maybe in years gone by when the food was "natural" - the intolerances were not there - but now the food is pasturised, pesticides etc etc - perhaps that has added to the intolerances.
Invite me please Squad, my only problem is garlic, I like it but it doesn't like me, but I always mention this when accepting an invite and if you come to eat at mine you wont taste any garlic in my food.
jennyjoan you have a very good point there about perhaps food intolerance being to do with additives and pesticides used on the food rather that the food itself.

My three children are lactose intolerant and have been so since they were babies. They projectile vomited had apple jelly stools and were quite poorly. However as adults they now know what to avoid and dont make a big drama of it when eating out.
a friend of mine's baby was born THAT dairy intolerant and he nearly didn't survive. She was unable to breast feed and apparently its not good to give baby boys soy milk so she relied on the generous ladies who donate to the milk bank for his first few months.
acquired alactasia is quite an interesting condition
( you could digest lactose and then suddenly in adulthood you cant )

My aunt in law t who was a diary farmers daughter got it - can follow too quick reintroduction of dairy products after a bout of diarrhoea. and was warned by another member of the family but did it anyway. It is permanent now apparently. ( cue irony klaxon )
Lactase is the protein that digests lactose and it clearly comes from DNA.
That would be lactase DNA.
Those who lose the ability to digest lactose in adulthood have a lactase gene that is LONGER than those 'normal'
Clearly the explanation - they have never met lactose ( = dairy farmed ) before wont work, or explain the facts
so the word in the lab is - they come genetically from a group that DID dairy farm then it fell out of use and then dairy farming was re introduced.
Not sure how that works, but that is the favoured current theory.

I am properly allergic to penecillin. I don't need an epipen because its next to impossible to ingest it accidentally. Happily my first reaction, while nasty wasn't life threatening. I "became" allergic in my late teens having had it numerous times before. Oddly in her seventies, my late mother also developed penecillin allergy.
