I've just been watching a programme about people paying obscene prices for luxury food and drink - including caviar.

The sturgeon is a huge fish, but I've never seen it on a menu. What happens to the fish after it's been killed and the roe/caviar extracted?

Mastercraft -it would make more economical sense to somehow extract the caviar as it must take a long while to get these fish mature enough to produce eggs. I've read somewhere they may 'massage' the eggs out.

They definitely kill the fish in the prog sher and i were watching, the roe was lifted out from the fish's underside in one huge dollop.

...and i think they said the fish is 12 years old before it produces. Definitely a long term investment!

Agree Retro. They also massage the sperm from male fish to fertilize eggs and keep their stocks up.
