I'm really keen to try this dish - has anyone had it and if so, does the lime juice make the fish taste really tart?

Not at all, the sweetness of the fish is complemented by the lime juice. Don't go overboard with the lime and you'll be fine.

If you want amounts I usually buy a pound each of wild salmon and sea bass or sea bream and use three limes (four if they're titchy) as well as a good amount of coriander.
