Slow Cooker help please!!

I have got a beef stew simmering away but the liquid is much thinner than I would like. I know that if I put cornflour in too early it will just cook out. So if my stew will be served at about 6.30pm...

slow cooker

Well have got a slow cooker for about 2 months now and I have found when I do my roast beef in it - the meat is dried up. It is tender enough but dry. I just put it with an onion.
