Editing text from a scanner

I am using an Epson Photo PX800FW four in one. Is there any way I can scan a document which will then allow me to edit a portion of it?

Lost rows in Excel Office 2007

I am using Excel in Office 2007. When I reopened my worksheet I cannot locate rows 3-12. I didn't hide them but tried unhide anyway with no joy. They were visible last time I was using the worksheet....
