I have a bag of large frozen scallops and have been browsing recipes using them. The one I fancy is to put them on top of a slice of black pudding, on top of colcannon mash, finished with some crispy bacon rashers on top of everything.
Does anyone have any tried and tested favourite way of using them?

I put some on top of a chilli lime stir fry, with salmon, and although it was nice, I'm looking for something really, really tasty. I remember having scallops and bacon kebabs some years ago and thinking they were absolute nectar :)

I've seen them mentioned a few times with pea purée, might have to give that a go too.
Indian spiced purée of cauli or celeriac (you can cheat and use a spoon of paste), griddled/fried scallops and a little salad of julienned carrot with a good squeeze of lemon juice and a spoon of plain oil heated up and a spoon of black mustard seeds added and thrown over the carrot when the seeds sizzle. A few leaves of fresh coriander taste good and make it look pretty.
Scallops and smoked bacon are a match made in heaven - your idea sounds great to me. That reminds me that I froze some a while ago, perhaps use them tomorrrow.

Grassy, the chilli lime thing was a mixture of suggestions from Ummm and Eccles, so of course it was exquisite.... :)
