This is a really easy recipe for bite size choux buns.
125 ml water
125ml milk
120g cubed unsalted butter
120g plain white flour
4 medium eggs
100g grated cheese (cheddar or gruyere)
pinch of pepper and pinch of paprika
1.Preheat oven to 200 degrees C, line 2 baking sheets with parchment
2. Put water,milk,butter and pinch of salt into pan, bring to boil.
3.Add flour and stir until you have a smooth dough. Turn down heat and continue to stir until dough pulls away from side of pan. Just a couple of minutes.
4.Transfer dough to large bowl and allow to cool for a minute. Beat eggs into dough one at a time. Add cheese,parika and pepper.
5. Put teaspoonfuls into little balls on parchment about 5cm apart/
6. Bake 15/20 minutes.
7. Let them cool and then make a tiny slit and fill with perhaps boursin cheese or whatever you fancy.
8. These can now be frozen for up to 3 months.
9. Take out required quantity and reheat in oven for 3/5 minutes. Serve hot.
This recipe is far easier than it sounds and makes about 40 bite size buns.
