It's a bit complicated to explain.

Why is it that I can put my left arm up behind my back and lay it flat, then put my right arm over my head and meet the fingers of my left hand and yet when I try it with my right arm I can get nowhere near?

I have a feeling it's something to do with the muscle at the top of my right arm.

This is a serious question.

Mmm...just tried it Tilly and the same result. Now you need to find left and right handed people to try and see if there is a difference. I'm right handed... you? x

I can't do it with either arm (right handed (almost) 45 year old). :-/

Probably left and right joints not equally flexible in the opposite directions. Keep practicing :-)
As AOG has said probably one side more flexible than the other. But your question prompts another. Why do it?

Can't do it either side, bit too much muscle across shoulders/neck I think, usually quite flexible.

Tilly. Interestingly this a posture called 'Cow Head' or 'Cow Face' pose in Yoga.

In my experience over many years this is true for 80% of the class.
Never quite figured out why!
