Obviously part of the reason is (dirty) habit behaviour but do some people just produce more saliva than others?
Only reason I ask is if I wanted to start spitting as an habit, I couldn't. I just don't produce that much saliva that I could keep expelling it.

A lot of spitting went on when chewing tobacco was a thing. I recall tobacco pouches that were put inside the cheek were briefly popular in the mid 1980s. Can't remember what they were called but they caused spitting too.
I used to succumb to chest infections which made me spit but also made me too ill to go outdoors.
Some people do suffer from nasal polyps and postnasal drip, both can cause a distressing amount of mucous to almost continuously trickle down to the throat.
Spitting did used to be a swagger thing.
TB was very common until fairly recently and that caused dreadful coughing and spitting spasms
