Good Morning All, Blimey, despite going mad with the shortbread I have gone down two pounds. The only explanation I can give is that everything else that I have eaten must be right. At any rate I don't recommend everybody casting themselves over shortbread. I just happened to remember some being left over from Christmas and once remembered was the beginning...

An Asian noodle salad made with fine rice noodles and shredded and julienned veg of choice, make a dressing with soy, lime juice, brown sugar and chilli, add ginger too if you fancy. Finish with a sprinkling of toasted peanuts and some fresh coriander. Serve with sea bass marinated in a little garlic, chilli and ginger.
Here is my fish contribution, not really a recipe just the way I like it to be cooked.
Personally I love a juicy chunk of salmon steak with new potatoes and aspargus, unfortunately, I do tend to slather on the Hollandaise :-).
Or something that is really quick and tasty are those boneless smoked mackerel fillets, just pop them under a medium grill for 3-4 mins each side yummy. Fantastic with some salad.
Apprently oily fish like salmon and mackerel are good for boosting the old brain cells. Could do with some of that this Monday morning :-)
A tabbouleh made with bulgar wheat, lots of soft herbs (parsley, coriander, mint are all good), some shredded watercress, rocket or spinach work well too, then add chopped spring/red onions, de seeded chopped cucumber, handful of raisins, toasted pine nuts, a splash of olive oil and lots of lemon juice. Serve it with swordfish kebabs marinated in oregano, garlic and lemon juice/zest.
Left over tabbouleh makes a good snack with a bit of feta crumbled over.
Preheat oven to 375 degrees F (190 C)
Cut 6 foil squares, large enuogh for the size of each filet
Center filets on foil squares and sprinkle with dry ingredients.
Sprinkle lemon juice over each one
Fold foil over filets to make a pocket and pleat seams to enclose
Place on baking sheet and bake in preheated oven for about 30 minutes, less in a fan oven.

Went to buy whole sardines yesterday, they had sold out, so I got a whole trout. In the fridge, probably this evening's dinner.
Do anyone recommend a particular cookbook for fish ? I was looking at some from Rick Stein on the web yesterday but didn't commit to getting one. I think one needs to browse them first or find they are full of difficult to source ingredients or something after purchasing them.

Wendilla, I'm quite happy with my lumps and bumps! If I lose weight I'd have to go clothes shopping and I really can't be doing with that ;-)
I only dropped in as I saw the call from Ed for some recipes. The Asian Noodle salad is a good recipe so thought I would throw it in as it is low fat and is very versastile.
True, but the fat free vinaigrette ain't so damaging Wend. It's the roll, croutons, bacon type bits, raisins, oh I don't know, all the stuff one doesn't think of as proper salad. Not that I go there much these days anyway. Don't think they are the same as they used to be. But there again where is ?
Ah yes, but I don't have a tablet to use in the kitchen x, maybe if I got a printer working but I gave up on that years ago. Used so rarely they just dry up on me. But an open book ..... Maybe I've found the very first reason to have a portable computer ? Not going to hold my breath about getting one though.
That rainbow trout didn't look that big on the shop slab ! Due in one minute, I hope I can cope with a big meal. I think I should stop going for whole fish and try the fillets instead.
No problem EcclesCake we welcome any ideas . XTITCHER started this over 2 years ago and I replied . Then the Ed gave us a monthly posting to keep us going .We have lots come and go but lots keep coming back. It is not easy so all the ideas are appreciated.
Forgot to add what works for some doesn't for others like I swear by a glass of unsweetened grapejuice every morning but some people on certain medication are not allowed it. It does help to break up body fat .
Brilliant x. Managed to cope with the quantity although after weighning before and after I estimated over 500 calories in the one fish. It put me over goal for the day :-( . I should have allowed for it earlier on.
I opted not to leave it open for the skin to crisp, as I usually prefer, but to make a foil parcel with a little oil, small (honest) knob of margarine, lemon juice, basil, s&p, and left it in the oven for about twice as long as I normally do. Tasted divine.
