Suggestions for sarnie fillings please

I am running out of ideas for sandwich fillings.
Any interesting ideas that do not involve "dry" fillings like, say, cheese would be most welcome.
Ideally things in mayo or "saucy" fillings are desired.

Brie and walnut, if making it for a packed lunch the brie has become soft and unctuous by the time you are ready to eat it.
Curried egg mayo.
Pastrami and sauerkraut with gherkins and mustard.
I know this isn't everyones fave but I do like chopped beetroot with a sharp cheddar and salad cream.
Hummus and grated carrot.
Tuna/chicken, guacamole, tomato salsa, left over mexican rice and grated cheese in a tortilla. This is a good one to do if you've had fajitas the night before.
Rare roast beef, horseradish, thinly sliced beetroot and stilton.
