I can make a mean mash...but sometimes I see people putting an egg in it (or is it just the yolk?)

How do you do yours?
I love omlettes and they're great for us low carbers.but I used to moan like mad when they broke up on turning,until a handy hint off a friend, once bottom side is cooked instead of messing about turning it put under a pre heated grill and it cooks to perfection and fluffs up, so simple.

I only beat the eggs 10 times from front to back of a cereal bowl and then turn the bowl 45 degrees and beat 10 times again (using a fork not a whisk). Pour the mix into the omelette pan when the butter is foaming and using the fork pull the egg into the middle away from the sides all the way round the pan, rolling the pan to fill any voids with liquid egg when the bottom is mostly cooked I put the pan under a hot grill and watch the eggs fluff right up. I fold once and brown the base if it needs it. Oh, it's going to have to be a fried mashed potato omelette now.
