You can make Potage Bonne Femme without any cream or stock!
I sweat some potatoes, carrots, onions and leeks in a pan, then I season them when they are beginning to soften, then I add some stock or water and let the whole thing bubble away until the veggies are cooked. When that's done I get the "outboard motor" (hand blender) and blitz but not until it's completely smooth, it's nice to have some bits of veg to bite on. If I have some leftover cooked veg I usually bung that in too.
You can also make potato and leek soup using milk instead of cream
