I always wait for the water to boil in the pan before putting the eggs in as I don't want to putt the eggs in cold water and then have to stand and watch the pot for it to boil and then time it from there... far too much hassle.
I prick the eggs because that prevents them from cracking when you dip them in boiling water. I lower them into the water with a table spoon so they slowly get adjusted to the heat and for soft boiled I give them about 5-6 mins for large eggs (6-7 for those ones called BIG) and about 10-11 for hardboiled.
I've just realised that this question has been moved from ChatterBank to Food & Drink section. Maybe that's why only the orthodox bourgeois methods are listed, and my earlier answer - advocating a more modern method of boiling an egg, using the most up-to-date technology - has been grobilsked by the Editor.
