Ingredients
4 cups mashed potatoes (better to use day old mashed potatoes)
1/2 cup chopped onions
1 egg
1/4 cup flour
Directions
Mix all ingredients together. Use an ice cream scooper to pick up mixture and drop on an oiled grill or iron skillet. Cook until 1 side browns. Then flip it over and press patty down. Cook other side until it browns. Cook on each side for 5 to 6 minutes.
Additionally, one of my favorites is to slather on to a fresh slice of (preferably sourdough) bread a goodly amount of firm mashed potatoes (at least 1.2 inch thick) and add a thick slice of onion... add top bread slice... et voila one of the world's greatest sandwiches...
I don't understand.....you have leftover mashed potato??? I never knew that could happen! ;)
Fry some onions and bacon and add the mash until it goes brown and crunchy.
Make fishcakes using poached white fish, spring onions and parsley.
Make potato croquettes by moulding the mash into cylinder shapes, roll them in flour, then beaten egg and finally breadcrumbs. Shallow fry until golden.
