i have a glut of tomatoes at the moment , what shall i make with them !!

For more on marking an answer as the "Best Answer", please visit our FAQ.fry some chopped bacon (8 rashers) in butter, once it's golden add in one finely chopped onion and plenty of garlic (2 cloves). Once this is softened, add in ca 1kg tomatoes (peeled and pretty much seeded) and some oregano. If the tomatoes aren't sweet, you might add a half teaspoon of sugar. Simmer for 15 mins and voila! Best pasta sauce in the world. it freezes like a dream and is fantastic if you get unexpected guests. Just add to your favourite knd of pasta, serve with pecorino or parmesan and some crusty bread. Mhmmmmmmmmm....
I have lots of tomatoes, and just jar them up and use them over the winter. Boil them for a minute to loosen the skins, peel them, stuff them into jamjars with some garlic or basil, pop the lid on, and boil the whole jar in a large pan for half an hour. They stay fresh for months and taste loads better than normal tinned tomatoes.
Make tomato purree which can be stored in bags in the freezer.
Fry chopped onion (& garlic & basil if liked). When soft add chopped tomatoes & cook for about 20 minutes until mixture is soft and juicy. Season with salt & pepper. Cool slight and blitz down in food processor or a pulse beater. Bag off in the size of portions you're likely to use to Spag. Bol, casseroles or soups. Will keep perfectly in a freezer for about 3 years & you can also dilute this mixture to make a delicious soup.
