do we get beef / steak from dairy cattle - if not what cows or bulls do we get most of our beef / steaks products from in the uk ?

No not from dairy cattle -a lot of Aberdeen angus

i only say that because there seam to be a lot more female chickens around that there are cockerels

That's because we eat the cocks and leave the hens for laying.
Well actually most male chicks are killed shortly after hatching as they aren't required by the poultry industry, ditto for male dairy calves (I know they aren't hatched)
male calves tend to be used for veal if the farmer is willing to run a side business.

as mentioned male chicks are killed but in days of old they would have been raised and eaten as capons.
The female side of Beef(i.e cows) are used for milk except younger uncalfed ones called heifers which can be used for meat. All the male side of cattle can be used for meat. When cows finish milking, the meat can usually only be used as mince as it would be too tough to roast or grill
It was mentioned on 'Sunday Brunch' yesterday. We eat female chickens in general but male cows as the females are used for milking.

This reminds of something I saw on Jamie Oliver's Friday night program about goats. Because of the popularity of goats milk and cheese now,there are masses of unwanted baby billy goats being destroyed,when they make lovely meat. Such a waste. I'd be willing to try it...but where to find it?

Generally most animal males are farmed for meat as they're bigger and surplus.
again, meat hens tend to be a different bred from egg hens.

If you breed your own birds for eggs, you can eat the cockerels but they won’t have a lot of meat on them, also they will fight and may need separating or killing before they reach full weight.
in commercial egg production, male chicks are killed at hatching as they don’t pay for rearing unlike male calves, lambs or goats.
