I do a fair bit of baking and I'm often asked by family, friends and colleagues to make a cake for little celebrations.
I made a couple of Ferrero Rocher cakes recently, a cherry almond bakewell, a courgette and pistachio cake, a toffee apple crumble cake and I'm even considering making a gulab jamun inspired cake. The most recent thing I baked was a carrot and parsnip cake.
However, for me, you just can't beat a nice Victoria sponge with fresh cream and jam. No other country in the world can make a cake to compete with that, imo.
NoM, if you just google sainsburys lemon drench cake it's right there at the top. I've never quite got the hang of doing links on this 'ere iPad.
Himself has just made one, about ten minutes more to go in the oven. Couldn't get the poppy seeds locally so haven't bothered, don't think it'll make much difference.
Probably old fashioned chocolate cake with butter icing but a friend makes the best carrot cake I've ever tasted, I think it's because she uses mascarpone for the icing.
I used to bake a lot...using recipes from a 50-60 year old pamphlet that had been my mum's...very rich dark chocolate cake, a Maryland gingerbread cake, and carrot were my favourites. They were all incredibly moist and didn't really need icing.
My mother's coffee and walnut cake with coffee icing, was the ultimate cake! Just superb! I learnt how to bake from her, but, I don't have the sweet tooth to carry it on!
