If you were running a restaurant, and the local food hygiene inspector found an open can in your fridge, you'd be marked down for it. However plenty of people are happy to leave food in opened cans (including me, and I haven't even got a fridge!) and nobody seems to come to any harm through doing so.

This used to be an issue but my understanding is that canning technology effectively removed the risk(s) decades ago. In fact it can be argued that the act of transferring the contents to another container introduces a risk of contamination with bacteria whereas the tin contained more or less bacteriologically sterile food to start with.
