goat's cheese obtained from black-haired goats on the south side of the Jura mountains, not above 500 metres; best from early spring milking ...well, tonyav's suggestion looks easier to get your hands on
Mmmmmmm, quite like the sound of that cheese from the Black haired goats. I wonder if it would taste the same if the Black haired goats were from the South side of mount snowdon.

scorpiojo, I haven't tried Wensleydale, does it go all gooey and stringy? That's how I like it.
The cheap mature cheddar (working out at under £5 per kg) that Lidl sells toasts beautifully.

However it's often stated that red leicester is the best cheese for toasting (and I certainly like it).

Cheddar. Make a cheese sauce with beer
Red Leicester for me
Red Leicester with a bit of Cayenne pepper.
It has to be a good strong vintage cheddar.
Or Double Gloucester
strong cheddar everytime!
