Cauliflower

I have had delivered a rather large cauliflower and although it's ok it's not at peak freshness.
I can only cope with a small amount of cauliflower at a time.
I wondered - should I blanch it or roast it and freeze it ?
I can make soup with some of it for now. Any suggestions please ?

First one, I used the whole of it to make cauliflower cheese. It did us for two days and was delicious.
The second one, I added half of it to a roasted root veg curry towards the end of cooking, as per the recipe, it also was delicious.
I have the other half in a plastic bag in the fridge, it will be chopped up and added to a chicken korma tomorrow night...I always add cauliflower to curry.
