I believe that they originated on Shove Tuesday, the day before Ash Wednesday in the Christian calender. Ash Wednesday marks the start of Lent, which is a period of fasting, self denial and reflection up until Easter.. Apparently all the luxury foods had to be consumed by Shove Tuesday, so that fasting could start the following day, so pancakes evolved as a way of using up flour, eggs, butter and milk.

You'll find that literally every country and civiization throughout history had some variant of what we call pancakes. Here in the U.S. our pancakes differ from yours in the U.K. just as they differ from German pfannkuchen, French crepes, Russian blinis or Mexican buenelos, tortillas or tamales. A simple mixture of flour, milk or water and other ingredients baked or fried on a hot iron or stone seems to have been universal in its appeal...
