Bacteria live in the scores and chips on chopping boards, knives and also in tea towels and generally on working surfaces. The issue is as much of cross contamination, not that there is likely to be salmonella from raw meat on the carotts. Soil can carry listeria so the bacteria can pass the opposite way as well onto raw meats, so good basic hygiene is important in any kitchen.
