Hi everyone,
Does any body know a good way to slow the ripening process of bananas, keeping them green for longer?

The best method that I can come up with is I buy one fresh one, one semi green one and one very green one, that way they ripen a couple of days apart.

I've also struggled with this one and even wrote to Ffyes, the banana importers for their recommendations which weren't very helpful, apart to suggest storing them in a cool place. When we buy enough for our weekly needs we try and do what Don1 does, and buy some ripe and some green ones. However, I think supermarkets have got wise to this as they don't often stock really green ones. However, I've found that if you skin them before they get over ripe and store them in the freezer, they do at least remain edible when they have thawed through.
