They will soon be here sooooo, besides ham, cheese, eggs, prawns, tuna, quiche and pork pie, what else can we have with our salads to liven them up!


Nought too fancy or expensive please! :0)

Personally I like a scotch egg with a salad and some onion rings soaked in vinegar for an hour or so.
As am on a of diet had couscous salad for dinner -
I am getting hooked on it and Mr. S. groans every time I make it. ! (meat and two veg man) !
Make up the couscous ,let it go cold .
Stir in a tablespoon walnut oil and juice and zest one lemon.
Finely dice green pepper,yellow pepper ,cucumber , tomatoes and mix into the couscous.Sling a bunch of chopped spring onions in too.
Mix well and season.Then add torn watercress. Very nice!
I shall sling a tin of tuna into the leftover portion for tomorrow.

I buy those jars of feta cheese in flavoured oil. They are so handy and go well with salad leaves. Asda do the jars, and other supermarkets just seem to do seal-fresh plastic tubs. They keep in the fridge for ages. Happy munching !

..in a frying pan lightly brown some onions in a bit of butter, add some curry powder, add some chopped up apple, drain on kitchen paperand leave to go cold, shred up some cold cooked chicken, mix some mayo with the cooled onions, add a bit of youghurt, some raisins, mix with the chicken....

My first thoughts turned to fish.

I'm glad to see that Bellasasha has aleady suggested the much under-rated smoked mackerel.

Smoked salmon isn't particularly expensive if you buy it in the right places but I prefer smoked trout. (You can buy it quite cheaply if you've got a Morrisons nearby).

Fresh salmon isn't particularly expensive if you take into account that a small portion can be quite filling. (Try a lime-based marinade with it).

Although we tend to think of cold items to go with salads, don't forget hot fish dishes like grilled sardines. (Cheap, filling, nutricious and, best of all, delicious).

Alternatively, keep it really simple. A good quality Cheddar cheese, (e.g. Keen's Cheddar from Waitrose) can be the basis of a great salad. For something slightly more 'exotic', though, try Blue Stilton accompanied by mango chutney.

thanks everyone, some interesting answers and ideas. we had salad tonight!! i had egg and cheese with mine and a jacket potato! but it was delicious (well, it was the first one of the season!) x

Mmmm, salad... bean shoots, spring onions, beetroot, red onion, diced peppers and lovely lovely lovely cherry tomatoes!
Cashew nuts toasted for a couple of minutes in a frying pan (with a mere dash of olive oil) until they're all brown and crunchy.
