do some mediterrainian roast veg-cut into chunks tomatoes,red&green peppers,courgettes,red onions and the aubergines. Add olive oil,chopped garlic,some basil-roast in hot oven aprox 45min turning once or twice. You could also stuff them. Cut in half lengthways and brush with olive oil-roast for 15-20 min til softened. Scoop out the flesh and chop finelyThrow in a pan with a chopped onion,garlic and season well with pepper,basil and oregano. add chopped olives,roast peppers or whatever to this plus cooked rice or bulghar wheat or couscous-stuff the aubergines and sprinkle with some parmesan-bake until golden.
Slice thickly and smother with humous and roast in oven for 10 minutes. Yum
Thai green curry, aubergine style.
Fry green curry paste and fish sauce quickly and add coconut milk.
Add quartered aubergine, tsp sugar, beanshoots, green beans and cook slowly. Serve with rice.
make sure before you use it you slice it up and put salt all over then leave for a couple of hours and then wash the salt off. it takes off something that tastes bad/is bad for you or something
If you're having a BBQ at any time, throw a whole aubergine on the rack, and leave it until it's blistered & soggy, then all you have to do is scoop out the flesh & eat it.
Salting it used to be nesscessary to remove the bitterness, but modern varieties of aubergines have the bitterness bred out of them
