does anybody have a carrot cake recipe? and a fruit cake recipe pls?

1tsp mixed spice
4oz caster sugar
2 level tsp demerara
8oz SR Flour
4oz margarine or softened butter
2 eggs
milk
6" round tin or 8 1/2" x 4 1/2" loaf tin. Oven 180 degrees C
Cream fat and sugar. Add eggs. Fold in Flour and mixed spice. Add milk slowly until a soft dropping consistency (ie the mixture drops from spoon when it it turned upside down). Put into tin making a dip in the centre about 5mm. Sprinkle demerara. Bake for about 1 and a quarter hours.
You can use orange juice instead of the milk and add some grated zest to the mix for a nice orangey alternative.
This is a yellow rather than brown fruit cake and does not keep quite as well as a darker one. Enjoy XX
