I feel exactly the same as SKA I love it Have you tried this. Grate one onion and one carrot, finely chop the coriander (to taste) I would say a good handful, sprinkle with sugar about a teaspoon add vinegar to just covering ingredients it is nice sprinkled on salad or used with a curry, dip with a BBQ or just nice eating from the bowl. Ooh I will just have to go and make some.
Coriander, fresh coriander leaves that is, is fabulous sprinked over curries. I buy large bunches at the ethnic shops and put them in the freezer. When your curry is ready to serve, you can sprinkle the frozen leaves over your meal direct from the freezer.
I use coriander nearly every day one way or another and the best way I freeze it is Liquidise it (stalks and all most of the flavour is in the stalk) with a tin of tomatoesyou can then freeze it in the size you need I use a small plastic container and then transfer to a polythene bag once frozen the container is about 3" x 3" but again it all depends on how strong a flavour you want. I have tried freezing chopped coriander on its own but it tends to dry out so mixed with tomato it is OK and most recipes especially curries you have to put tomato in anyway and even for my corainder dressing see above you can use it with the tomato included
