I bought a chunk of chorizo sausage from the deli counter a few days ago and the use by date printed on the label is the 20th March. I thought sausage like that kept for a lot longer, can I still use it?

it freezes well too. if you don't want to use it today i'd just chuck it in the freezer, it'll be fine. these 'use by' dates are responsible for such a waste of perfectly good food.
I dice up chorizo sausage and add it to a stew. Gives it a lovely flavour.
As someone who has strong ties with Spain I know that you can keep chorizo for months in the fridge. In fact, the last ones I bought in Spain back in december are still in our fridge and keeping fine. They wont taste as fresh obviously, but they are good to eat!
