This recipe makes a lovely soup
1 Butternut squash cut into smallish slices
I medium onion chopped
1 x 400g tin chopped tomatoes
1 pint stock
black pepper + dried basil (optional)
1 tbsp olive oil
Fry onion in olive oil till soft. Add stock, tomatoes and squash. Bring to boil, simmer till soft. Give it the occasional stir. Season, blend and serve.
