Gravy to go with venison steaks

Any help appreciated on how to make a red wine gravy to go with venison steaks when I don't have any bones to roast and also do parsnips and carrots take the same time to roast in the oven. Any advice would be appreciated as I may have been too adventurous at the farmers market yesterday. Thanks in advance. Fran b.

For more on marking an answer as the "Best Answer", please visit our FAQ.if your feeling brave try my gravy....red wine(small bottle), brown sugar (5 or 6 heaped tablespoons)reduce for as long as it takes to go sort of syrupy,then add half a bar of bitter black chocolate and one or two finely chopped chillis. dosent sound tasty but it is! have you tried vennison before?? i'm lucky enough to have a chest freezer full of it...i live near a large estate and they let me shoot two deer every season! if you ever get the chance,try vennison sausages,they're fantastic! good luck :)

we get a local butcher to make our venison sausages with all the smaller cuts of meat. most of the estates i know of would do the same with pheasant,rabbit etc,so it might be worth your while trying to sniff out a local gamekeeper or two for a good supply! they can usually be found through country pubs etc. unfortunately there dosen't appear to be any commercial supply of these products probably due to game only being available during certain seasons etc. good luck!
