Why doesn't the Welsh flag feature in the Union Jack? Or the Irish flag...? I can only see the Scottish + English one.

The Union Flag consists of the red upright cross on a white ground of St George (England), the white diagonal cross on a blue ground of St Andrew (Scotland) and the red diagonal cross on a white ground of St Patrick (Ireland). Wales had been, in effect, "incorporated" into England as long ago as the 13th century - though I know the Welsh wouldn't thank me for saying so - so its flag was not included.
I always thought it was because it is a Principality, just as I thought the flag beast was a griffen or griffen, but then I was only born there!
Griffin? It's a dragon, and you were born in Wales? I'm welsh, and that is shocking you dont know what is on your own country's flag.
