........... what Jack and the others have said, Peeler.
Whatever you do ............ don't get one of those designer/ consultants in from a supplier. They're mostly not designers nor consultants ......... but salesmen :o(

Solid oak for the carcasses ? Wow, I never found anything on sale other than chipboard, although one could choose between 2 widths.
Just draw a scale plan of your space, cut out to scale rectangles to represent the units/fridge/cooker/etc. Play around getting a layout that works. Try not to space the sink, cooker, fridge too far apart. Make sure you give yourself enough storage and worktop. It's good fun, and there is bound to be something you didn't understand or got wrong when you are trying to install it all. And you get the pleasure of knowing you could do better next time.

I would be extremely careful in using solid oak for the carcase of the units....the wood has to be relatively thin and this makes it very susceptible to splitting over time, american red oak is very prone to this so should be avoided at all costs, go for a good English or European white oak, English being the best, but not easy to get hold of

There are limitless design ideas and themes are available for designing your kitchen. You should make use of the colors and styles that represent your personal style and preferences. If you choose the right flooring, lighting, counter tops and cabinetry designs, you can completely change the design of your kitchen. Most often, these features set the mood and theme for your kitchen space. When choosing the styles and designs for each kitchen element, you have to consider the whole picture, ideally the completed kitchen. Choose the colors and designs that complement your whole kitchen and its features.
In the top rack of your kitchen, you can hang the pans and pots to give a unique look for the kitchen. It also allows you to easily access them when your need them for cooking. For lighting your kitchen, you can make use of the LED lights, but can also experiment with other interesting lighting fixtures such as layered kitchen lighting based on your design theme.
